Sort out fields with many options taking up so much space in the editor

Any fields with a significant number of options, such as a list of all of the countries in the world, end up taking a huge amount of space in the editor and severely impact usability. Would be great either to find a different way of display options, or to hide them after the first few, with a link to expand/collapse the remaining options.
