Send respondent email without storing email address

I'd like to send an email to the respondent, while still allowing them to remain anonymous to me if they prefer. For example, Google Forms enables respondents to get emailed a copy of their responses without having to provide an email address in the form response. That's basically what I want - you could add a separate email address input field that explicitly does not get submitted with the form response.
