It would be ideal for multiple fields in Tally to be able to be mapped to a single field in Notion.

Currently, you'd experience the property in Notion being overwritten indeed (if you did try it).
As a workaround for now, what you can do is use our Concat+ operator for Calculated fields + Conditional logic (see here: https://tally.so/help/form-calculator#dc13107ef7af4c0cb7fd34…).
By doing this, you can send all of the fields that were concatenated to a supported Notion property (either Number or Text property).
